Honey Garlic Chicken with Roasted Potatoes & Carrots – Sweet, Savory & Straight Comfort!

Instructions
Roast the veggies
Toss potatoes and carrots with olive oil, salt, pepper, and Italian seasoning. Roast at 400°F (200°C) for 25–30 minutes until golden and tender.
Season the chicken
Season chicken with salt, pepper, and paprika on both sides.
Sear the chicken
Heat a pan over medium heat with a little oil. Cook chicken 5–6 minutes per side until golden and cooked through.
Make the sauce
In the same pan, melt butter and sauté garlic. Add honey and Dijon mustard, stirring until glossy and slightly thickened
Coat the chicken
Spoon that sauce all over the chicken, letting it soak in and glaze beautifully.
Plate it up
Serve chicken alongside roasted potatoes and carrots. Drizzle extra sauce on top because WHY NOT
