The Cooling Rule: Since these are made with cottage cheese, they continue to set as they cool. Let them rest in the pan for at least 10 minutes before moving them to a wire rack.

Storage: Because of the high protein and moisture content, these belong in the fridge. Store them in an airtight container for up to 5 days. They are fantastic cold, but 15 seconds in the microwave makes them taste like they just came out of the oven.
