Preheat and Prep: Start by preheating your oven to 180°C (350°F). Line a large baking tray with parchment paper so your cookies don’t stick to the bottom.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, lime zest, and a generous twist of black pepper.

Form the Dough: Add the softened butter and the beaten egg to the dry mixture. Use a spatula or your hands to work it together until a smooth, even dough forms. It should feel soft but hold its shape.

Fold in the Flavor: Gently fold in the diced shrimp, the tablespoon of lime juice, and the chopped chives. Mix just enough to ensure the shrimp is evenly distributed throughout the dough.

Shape the Cookies: With slightly damp hands, roll the dough into balls about the size of a large walnut. Place them on your baking tray and press down gently to flatten them. Leave a little space between each one.

Bake to Perfection: Slide them into the oven for 12–15 minutes. You are looking for a light golden color around the edges.

Cooling: Let them rest on the baking sheet for 5 minutes before moving them to a wire rack. They are best served warm but are just as delicious at room temperature.
